Ponga los vegetales picados finos a sofre\u00edr hasta que adquieran un buen punto dorado. Salpimi\u00e9ntelos y res\u00e9rvelos.<\/p>\n<p>2. Pida en la carnicer\u00eda que retiren la piel exterior de la llana. Deben aplicarle unos cortes poco profundos a lo largo de la pieza (para evitar que pierda la forma durante la cocci\u00f3n), partirla por la mitad en dos trozos id\u00e9nticos y atarlos. Una vez atados, salpimiente los dos trozos y p\u00f3ngalos en una cazuela del tama\u00f1o adecuado. Con el aceite y la grasa bien calientes, \u00e1selos por todos los lados hasta que queden bien dorados.<\/p>\n<p>3. Riegue los trozos con la copa de rataf\u00eda e incorpore a la cazuela los vegetales sofritos. A\u00f1ada la hoja de laurel, un toque de canela y nuez moscada, y c\u00fabralo todo (hasta que cubra los trozos de carne) con agua mineral bien caliente. D\u00e9jelo cocer a fuego lento y con la cazuela tapada durante 2 horas.<\/p>\n<p>4. Reserve los trozos de llana cocidos y tiernos. Disp\u00f3ngase a preparar la salsa: cuele los vegetales y reserve el jugo. Los vegetales, p\u00e1selos primero por un pasapur\u00e9s y, seguidamente, por un colador chino. M\u00e9zclelos con el jugo reservado y p\u00f3ngalos en un cazo a cocer a fuego lento hasta que adquiera la textura espesa que desee.<\/p>\n<p><strong>FINALIZACI\u00d3N Y PRESENTACI\u00d3N<\/strong><\/p>\n<p>Retire los hilos de los trozos atados y c\u00f3rtelos en rodajas de 3 cm. \u00dantelas ligeramente con aceite y a\u00f1ada un poco de pimienta. Cal\u00edentelas en el horno a 190\u00baC hasta que est\u00e9n muy calientes.
