Disponeos a elaborar el pur\u00e9 de casta\u00f1as. Coged el medio kilo de casta\u00f1as, hacedles un corte en cruz a cada una y ponedlas a hervir con agua y sal durante 20 minutos. Escurridlas, peladlas y triturad la pulpa cocida hasta conseguir una pasta fina.<\/p>\n<p>2. En una olla, con un chorro de aceite, sofre\u00edd el puerro hasta que est\u00e9 cocido y dorado. A\u00f1adid el ajo y dejadlo sofre\u00edr solo 30 segundos, y salpimentad el conjunto.<\/p>\n<p>3. Echad al olla el agua mineral caliente, los 300 g del pur\u00e9 de casta\u00f1as y el vino dulce. Saladlo, a\u00f1adid un punto de nuez moscada y dejadlo cocer a fuego medio, a hervor, durante solo 5 minutos. Triturad el conjunto bien fino, colad el caldo y rectificad el punto de sal y pimienta. El caldo est\u00e1 listo.<\/p>\n<p>4. Los tropezones de boniato: Escalivadlo al horno a 190\u00baC, envuelto en papel de aluminio, durante unos 50 minutos..<\/p>\n<p>5. Los tropezones de calabaza: Hacedla a dados regulares de 2 x 2 cm. Ponedlos salpimentados y con un hilo de aceite, en una bandeja de horno forrada con papel sulfurizado en el fondo, y dejadlos cocer al horno a 190\u00baC, durante 15 minutos.<\/p>\n<p><strong>PRESENTACI\u00d3N DEL PLATO<\/strong><\/p>\n<p>Servid el caldo bien caliente en platos hondos y encima, repartid los dados de calabaza horneados y calientes. A\u00f1adid tambi\u00e9n la pulpa cocida y caliente del boniato a peque\u00f1as cucharadas, como si fuesen quenelles.
