itemprop=\"text\" ><p><strong>PREPARACI\u00d3N Y COCCI\u00d3N<\/strong><\/p>\n<p>1. En una cazuela del tama\u00f1o del corte bridado, con un buen chorro de aceite, a fuego medio, asar el corte bien salpimentado. Debe quedar bien dorado por todas las caras.<\/p>\n<p>2. En una sart\u00e9n bien ancha, con un chorro de aceite, sofre\u00edr la cebolla, la zanahoria, el puerro y la piel de las mandarinas. Salpimentar con moderaci\u00f3n.<\/p>\n<p>3. En la cazuela con el corte bien dorado, a\u00f1adir el brandy, el vinagre, la miel, el laurel, el tomillo, la canela, los clavos y la nuez moscada. Tambi\u00e9n los vegetales sofritos de la sart\u00e9n, el zumo de cuatro mandarinas y tres tazas de agua. Tapar la cazuela y dejar cocer a fuego muy lento, durante una hora. Controlar que el guiso se mantenga jugoso durante todo el tiempo. Cada cuarto de hora dar la vuelta al corte bridado (si es necesario, a\u00f1adir una taza de agua).<\/p>\n<p>4. Retirar el corte de carne de la cazuela. Pasar todos los vegetales y jugos por un pasapur\u00e9s y, seguidamente, por un colador fino (o colador chino). Rectificar de sal y pimienta, y desgrasar la salsa retirando con cuidado todo el aceite de la superficie.<\/p>\n<p>5. Finalizaci\u00f3n del plato. Retirar el hilo del corte bridado y cortarlo en lonchas medianamente finas. Ponerlas en una cazuela ancha, incorporar los gajos de las seis mandarinas restantes y napar con la salsa colada. Poner de nuevo a cocer a fuego muy bajo, moviendo suavemente la cazuela.
