itemprop=\"text\" ><p><strong>PREPARACI\u00d3N Y COCCI\u00d3N<\/strong><\/p>\n<p>A la avanzada (*), sofre\u00edd la cebolla picada hasta quedar bien cocida y dorada (unos 45 minutos), reservadla. (Muy pr\u00e1ctico, puede ahorrarse hacerlo y usar el sofrito de cebolla Cuick, que es de mucha calidad).<\/p>\n<p>1. En una cazuela honda, de unos 30 cm de di\u00e1metro, d\u00f3nde presentar\u00e1 el arroz en la mesa, ponga un hilo de aceite. Dore los cortes de pato bien limpios y salpimentados durante unos 15 minutos, a\u00f1ada el brandy y contin\u00fae con una cocci\u00f3n lenta durante 10 minutos m\u00e1s.<\/p>\n<p>2. Eche a la cazuela el pimiento verde, el tomate rallado, el ajo laminado y los hilos de azafr\u00e1n, y contin\u00fae la cocci\u00f3n lenta, todo junto, durante 10 minutos m\u00e1s.<\/p>\n<p>3. Incorpore a la cazuela la cebolla sofrita a la avanzada (*) y el arroz, salpimiente el conjunto y contin\u00fae el sofrito s\u00f3lo durante 30 segundos. Agregue en la cazuela el agua medida bien caliente y al arranque hervor, sale con moderaci\u00f3n. Deje cocer a fuego potente durante 5 minutos y despu\u00e9s prosiga la cocci\u00f3n durante 8 minutos m\u00e1s, a un fuego m\u00e1s lento.<\/p>\n<p>4. Mientras tanto, coja las aceitunas y c\u00f3rtelas en tres bonitos trozos, cada una, para desestimar los huesos. Reserve los trozos de oliva.<\/p>\n<p>5.
