Estos productos de \u201ccasquer\u00eda\u201d, tanto la cabeza, como la pata y los callos, los encontrar\u00e1 en el mercado \u201cprecocinados\u201d. Ser\u00e1 bueno volved a hervirlos en casa, con agua, sal y el bouquet vegetal, unos 30 minutos m\u00e1s. Dejad enfriarse dentro del agua de cocci\u00f3n.<\/p>\n<p>2. Disp\u00f3ngase a elaborar un buen sofrito, bien confitado. Empiece sofriendo la cebolla, hasta hacerla bien oscura, a\u00f1ada el tomate y contin\u00fae el sofrito, bien reducido. Incorporad los pimientos, el ajo y la guindilla. Salpimentar en el punto y ya tiene el sofrito listo. (Este sofrito puede elaborarlo con anterioridad, por ejemplo uno o dos d\u00edas antes y reservar en la nevera).<\/p>\n<p>3. Tomad una cazuela a la medida del volumen a cocinar, poned el \u201cpicado\u201d de jam\u00f3n y butifarra negra, tambi\u00e9n la cabeza y la pata a trozos regulares (poned los callos en su caso), aproximadamente todo cortado a unos dados de 3 x 3 cm. Agregad el sofrito confitado y el jerez dulce, dejad cocer todo junto a fuego lento unos 10 minutos. Afinad el punto de sal y pimienta. Incorporad la picada, si el guiso va corto de jugo, a\u00f1adid una taza del caldo del hervido de la cabeza y la pata, continuad cocinando el plato a fuego lento unos 10 minutos m\u00e1s. El plato est\u00e1 listo para degustar.<\/p>\n<p>AP\u00c9NDICE DE LA RECETA<\/p>\n<p>La gracia de este cocinado de cultura catalana, es el punto de terneza gelatinosa del corte y del sofrito confitado que lo empapa con un puntito picante. Son muchos los amantes de este plato que les gusta sumar tambi\u00e9n callos de ternera a las texturas gelatinosas de la cabeza y las patas. Este guiso hace buena pareja con garbanzos hervidos, o con jud\u00edas del ganxet. Tambi\u00e9n con arroz blanco, pasta fresca o patatas doradas.<\/p>\n<p>El capipota, en la cultura francesa es muy popular comerlo incorporando la lengua.
