Limpiad los calamares (p\u00eddalo en la pescader\u00eda, o h\u00e1galo en casa). Procurad no reventar las bolsas de tinta para no mancharlos, mantened la delgada y bonita piel rosa de los cuerpos. Reservad, por una parte, los cuerpos con los alerones, y por otra, las patas. Desestimad las tintas, las bocas y los ojos.<\/p>\n<p>2. Preparad el relleno. En una sart\u00e9n y con un hilo de aceite marcad las patas solo 2 minutos. Retiradlas de la sart\u00e9n y pasadlas por la picadora (si no dispon\u00e9is de picadora, picadlas a cuchillo, a trozos muy peque\u00f1os). De nuevo, tomad la sart\u00e9n con un hilo de aceite y sofre\u00edd las patas de calamar con el ajo y el perejil picado, sofre\u00edd todo el conjunto hasta conseguir un sofrito perfumado y dorado. A\u00f1adid la carne picada salpimentada, dad una vuelta por la sart\u00e9n para mezclarlo bien, solo 1 minuto, apartad la sart\u00e9n del fuego y ya tiene el relleno listo. Llenad los cuerpos de los calamares con el relleno preparado, procurad no llenarlo mucho, cerradlos con un palillo para atrapar el relleno dentro de los cuerpos.<\/p>\n<p>3. Tomad una cazuela a la medida de los 6 calamares, incorporad un buen chorro de aceite y poned a sofre\u00edr la cebolla picada, hasta un punto bien confitado, unos 35 minutos. A\u00f1adid el tomate rallado y continuad el sofrito 30 minutos m\u00e1s, salad con prudencia. Poned los calamares en la cazuela y el agua mineral caliente, solo hasta cubridlos por la mitad, continuad la cocci\u00f3n lenta hasta evaporar el agua, y conseguir una salsa brillante, corta y concentrada, controlad el punto de sal y el guiso ya est\u00e1 listo.<\/p>\n<p>AP\u00c9NDICE DE LA RECETA<\/p>\n<p>Si no dispone de tomate fresco muy maduro, elabore el plato con un buen tomate triturado de conserva.<\/p>\n<p>Acompa\u00f1e este plato de una guarnici\u00f3n de sabor neutro, para disfrutar de la espectacular salsa de los calamares rellenos. Un buen acompa\u00f1amiento puede ser un arroz blanco o unas patatas al vapor o una pasta hervida al dente.<\/p>\n<p>Esta receta es un homenaje a la cocinera de la casa familiar de mi marido, Toni Balam.
