itemprop=\"text\" ><p><strong>PREPARACI\u00d3N Y COCCI\u00d3N<\/strong><\/p>\n<ol>\n<li>Un d\u00eda antes, cortar la carne en dados de 2 \u00d7 2 cm, colocarla en un recipiente a la medida, a\u00f1adir el vermut blanco, tapar con film de cocina y dejarlo marinar en la nevera durante 24 horas.<\/li>\n<li>Tambi\u00e9n un d\u00eda antes, preparar un sofrito con la zanahoria, la cebolla, el puerro, el tomate, el ajo, el enebro y el aceite de oliva, a fuego bajo durante unos 30 minutos, hasta que quede bien confitado. Salpimentar y reservar en la nevera.<\/li>\n<li>Para cocinar el jabal\u00ed: escurrir los dados de carne y reservar la marinada. En una olla a medida, poner la grasa de cerdo y, cuando est\u00e9 bien caliente, fre\u00edr los dados de carne previamente salpimentados y ligeramente enharinados. Fre\u00edr la carne en dos tandas para conseguir sellarla bien y lograr que quede bien dorada. Retirar la carne de la olla y reservar.<\/li>\n<li>Incorporar el sofrito a la misma olla con la grasa perfumada de la carne, y a\u00f1adir el aceite y el vermut de la marinada. Dejar cocer todo junto durante 10 minutos a fuego lento.<\/li>\n<li>A\u00f1adir a la olla los dados de carne fritos y el agua mineral caliente, solo hasta cubrir la carne. Proteger el guiso poniendo encima, en contacto con el producto, una l\u00e1mina de papel sulfurizado (papel de horno), para ayudar a mantener los jugos del estofado. Tapar y dejar cocinar a fuego muy lento durante 2 horas.<\/li>\n<li>A\u00f1adir las alcachofas y, si fuera necesario, agregar un poco de agua y sal.
